Place beef bones in a large stockpot, cover with cold water, and bring to a boil. Blanch for 15–20 minutes to remove impurities. Drain, rinse bones, and clean the pot.

In a dry skillet over low heat, toast star anise, cinnamon, cloves, cardamom, coriander, and fennel seeds until fragrant, about 5 minutes.

Return bones to the cleaned pot along with onions, garlic, ginger, and toasted spices.For an even deeper broth, roast the bones and onions in the oven at 425°F (220°C) for 30 minutes before simmering.

Add 24 cups of water, fish sauce, sugar, and salt. Bring to a boil, then reduce heat to a very gentle simmer. Skim off any foam or impurities that rise to the surface.

Simmer uncovered for about 24 hours, adding water as necessary to keep bones submerged.

Strain broth through a fine mesh sieve into a clean pot. Discard solids. Taste and adjust seasoning with more fish sauce or salt if needed.

Cook rice noodles according to package directions. Drain and rinse with cold water to prevent sticking.
